    Vegan Pesto

    • Soak one cup of raw cashews in water overnight
      Strain and then throw in food processor; then add:
      3/4 cup of extra virgin olive oil
      Three large handfuls of arugula, kale, basil, or carrot tops
      Optional 1/4 cup of pine nuts or walnuts
      Salt and pepper to taste
      Blend on highest speed for approx 45 seconds

      Voila !
