Simply Satay Noodles

Satay Sauce
Blend one cup of peanuts with;
Half a cup of coconut or vegetable oil
Dash of soy sauce
One garlic clove
Squeeze of half a lime
1/4 cup of water
Option to add red chili flakes
Blend in a food processor until it forms a paste
Pour paste into a small pot, add one cup of coconut milk and a dash of vegetable oil
Bring to a boil, then cover and turn down to a simmer for five minutes
Noodles
Fill a medium-sized pot with water and a large dash of salt
Bring to a boil, then throw in ramen or egg noodles; cover and bring down to a simmer for three minutes
Take off heat and strain
Mix noodles with satay sauce
To Complete
Sautée onions and some simple vegetables such as kale or cabbage and mushrooms in a teaspoon of fish sauce and a tablespoon of soy sauce
Once wilted, reserve as topping for noodles
Bring small pot of water to a boil, add an egg straight from the fridge
Leave to boil for exactly six minutes, take off heat and immediately cool under cold water
Peel and cut in half vertically, add to bowl
Garnish with chopped coriander, sliced spring onions, and sesame seeds
