Lucy's Basque Cheesecake
Ingredients
1kg of cream cheese (room temperature)
6 eggs
335g castor sugar
400g sour cream
Zest of 2 lemons
2 tablespoons cornflour
½ teaspoon salt
Method
Preheat oven to 200c
Line the base of a large circular springform tin (about 22cm), and grease the edges with butter
Cut the cream cheese into small pieces, place in the blender with all other ingredients. *tip - it might be helpful to do this in parts separating the mixture into 2 or even 4, depending the size of your blender/vitamix/ nutribullet. Blend until smooth
Pour mixture into the tin
Bake for 50-60 minutes, you're looking for a slight wobble in the centre, while the top of your cake should be a burnish brown
